The short version

A skin of fresh mozzarella wrapped around a filling of cream and torn curd. Cut it and the middle runs out. It's the best centerpiece on a summer board and the shortest-lived thing you'll buy — days, not weeks.

What it is

Burrata was invented in Puglia in the early 1900s as a way to use up mozzarella scraps: leftover curd shreds mixed with cream and sealed inside a pouch of fresh mozzarella. The name means "buttered." The outer skin is firm and squeaky; the inside is stracciatella, which is also sold on its own.

How to prep it for the board

1. Buy it the day you serve it. This is the rule. Burrata is at its best within 48 hours of being made and noticeably worse after four days. 2. Take it out of the fridge 30 minutes ahead and drain it from its liquid. 3. Put it in a shallow bowl on the board, not directly on the wood. It releases liquid and it will run. 4. Cut it open at the table, in front of people. The reveal is half of what you're serving. 5. Season it after cutting — olive oil, flaky salt, cracked pepper. Unsalted burrata tastes flat. 6. Serve 1–2 oz per person. One 4 oz ball serves two to four as part of a board. 7. Fix: don't refrigerate leftovers expecting them to hold. Use them that night on pasta or toast.
