Thanksgiving Charcuterie Board Ideas

A Thanksgiving charcuterie board should hold guests over, not fill them up: keep it light before dinner, lean on fall flavors (sharp cheddar, apple, pear, cranberry, pecans, maple) and serve it about an hour before the turkey. For a crowd, build the turkey-shaped board; for a small table, an easy board for under $40 does the job.

Thanksgiving board shapes

Turkey Board

  1. Place a round of Brie or a halved pear low in the center as the body.
  2. Fan rows of crackers, salami, cheese slices and apple slices above it in a half circle for the tail.
  3. Give it a face: a candied pecan beak and two pretzel or olive eyes.

Cornucopia Board

  1. Lay a curved line of breadsticks or a folded tortilla horn at one corner.
  2. Spill grapes, figs, apples and nuts out of the open end across the board.
  3. Tuck cheese and meat into the flow so it looks like a harvest spilling out.

Leaf Garland Board

  1. Run a diagonal line of cheese cut with a leaf-shaped cookie cutter across the board.
  2. Line both sides with folded salami and prosciutto.
  3. Fill the corners with pears, pecans and crackers.

Countdown plan

  1. 1 week beforeOrder specialty cheese, and buy nuts, jams and crackers (they keep).
  2. 2 days beforeBuy fresh fruit, cheese and meat. Make or buy the dips.
  3. Thanksgiving morningSlice hard cheeses and fold meats; cover and chill. The oven belongs to the turkey, so do anything warm (baked Brie) now.
  4. 90 minutes before dinnerTake cheese out of the fridge. Build the board.
  5. 1 hour before dinnerPut the board out. Take it away when the turkey comes out so nobody fills up.
