Quick Answer: A Thanksgiving charcuterie board comes before a big meal, so plan 2 oz of cured meat and 2 oz of cheese per guest, plus 6 to 8 crackers per person. That's 1 lb of each for 8 guests, 1½ lb of each for 12 and about 2¾ lb of meat and 3 lb of cheese for 20. Put the board out about an hour before dinner and take it away when the turkey arrives, so nobody fills up before the main event.
Why Thanksgiving needs less than a normal party
At most parties the board is the food, and guests eat 3 oz each of meat and cheese. At Thanksgiving it's the warm-up act for turkey, stuffing, three sides and pie. Guests nibble, chat and save room, so 2 oz of each is plenty. Buying for a regular party just leaves you with a fridge full of salami next to the leftover turkey.
Thanksgiving charcuterie amounts by guest count
| Guests | Cured meat | Cheese | Crackers | Fruit | Nuts | Olives and pickles |
|---|---|---|---|---|---|---|
| 6 | 12 oz | 1 lb | 36–48 | 12 oz | 3 oz | 6 oz |
| 8 | 1 lb | 1 lb | 48–64 | 1 lb | 4 oz | 8 oz |
| 10 | 1¼ lb | 1½ lb | 60–80 | 1¼ lb | 5 oz | 10 oz |
| 12 | 1½ lb | 1½ lb | 72–96 | 1½ lb | 6 oz | 12 oz |
| 16 | 2 lb | 2 lb | 96–128 | 2 lb | 8 oz | 1 lb |
| 20 | 2¾ lb | 3 lb | 120–160 | 2¾ lb | 11 oz | 1½ lb |
| 30 | 4¼ lb | 4½ lb | 180–240 | 4¼ lb | 1¼ lb | 2¼ lb |
Cheese is rounded up to the nearest half pound, since that's how most cheese is sold. From 20 guests up, the amounts include a 10% buffer for a crowd. These come from the same numbers as our Party Planner, which works out a full shopping list for any guest count.
How many kinds? Three cheeses and two meats cover up to 10 guests. For 12 to 16, go to three or four cheeses and three meats. For 20 or more, set up two boards at opposite ends of the room so people don't crowd one spot.
If guests will graze all afternoon
Some families eat at 5 and arrive at noon for the football. If the board has to last several hours before a late dinner, plan 3 oz each of meat and cheese per guest: 1½ lb of each for 8 guests, 2¼ lb of meat and 2½ lb of cheese for 12, and about 4¼ lb of meat and 4½ lb of cheese for 20. Put out half, keep the rest in the fridge and refill.
What to put on a Thanksgiving board
Pick flavors that suit the season without stealing from dinner:
- Cheese: an aged cheddar, a brie and an aged Gouda. Add a blue if your family likes one.
- Meat: salami and prosciutto. Skip heavily smoked meats that compete with the turkey.
- Fruit: apples, pears, grapes and dried cranberries.
- Extras: candied pecans, fig jam, honey, and a bowl of olives.
- Crackers: plain water crackers plus one seeded or rosemary cracker.
Our Thanksgiving charcuterie board has a full plan, and the turkey-shaped board is the one the kids will photograph. For dessert, a Thanksgiving pie board uses the same idea with pie.

Thanksgiving board timeline
- Monday or Tuesday: shop for cheese, meat, crackers and nuts. Hard cheese and dry salami keep well.
- Wednesday night: slice the firm cheeses, wash and dry the grapes, and portion nuts and olives into containers. Our night-before guide shows what can be done ahead.
- About 1½ hours before dinner: take out the aged cheeses so they warm up.
- About 1 hour before dinner: build the board and put it out, with soft cheese and meat last.
- When the turkey comes out: take the board away. It shouldn't sit out more than 2 hours in total. See how long a charcuterie board can sit out.
Planning a Friendsgiving instead?
The same 2 oz rule applies. Our Friendsgiving board has a potluck list so guests can bring the extras while you bring the meat and cheese.
