Build it exactly, with the book
This board is in Charcuterie Lab: Impossible Boards, with 24 more showpiece boards. The book has the full shopping list, the layout, all eight build steps with the trick that makes the shape work, and easy, budget and luxe versions.
Why it works
The body is one ordinary thing from the produce aisle, so the turkey takes minutes. The tail is the board: fanned rows of soppressata, prosciutto, smoked turkey, cheddar triangles, Gouda cubes and apple slices.
It's rated 2 of 5, one of the easiest showpieces, and it's the appetizer kids will want to help with.
Timeline
- Day beforeSeed the pomegranates (or buy the seeds), slice the cheddar into triangles, and cube the Gouda and white cheddar.

Questions
How do you make a turkey charcuterie board?
Build a fan-shaped tail of meat, cheese and fruit rows, then add the turkey's body and face at the front. The book shows the one produce-aisle trick for the body.
How much should I make before Thanksgiving dinner?
As an appetizer before the meal, plan about 1½ to 2 oz each of meat and cheese per guest.
Can I make it ahead?
Cut the cheese and fan the meats the day before. Slice the apples last and toss them in lemon juice. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
