A dragon curled around its treasure: hundreds of salami, pepperoni and soppressata scales coil around the board, guarding a hoard of cheese coins and a gold-dusted brie.

This board is in Charcuterie Lab: Impossible Boards, with 24 more showpiece boards. The book has the full shopping list, the layout, all eight build steps with the trick that makes the shape work, and easy, budget and luxe versions.

Why it works

It looks impossible, but the dragon's body is a pattern you already know: overlapping rows of sliced meat, like roof shingles. Switching between soppressata, salami and pepperoni every ring or two is what gives it a striped, scaly look.

The hoard in the middle is the real board: Gouda and cheddar coins, Manchego wedges, brie dusted with edible gold, pomegranates, grapes, blackberries and apricots. Crackers, olives, cornichons, fig jam and honey ring the outside, so guests can graze from any side.

Questions

How do you make a dragon charcuterie board?

The body is rows of overlapping meat slices laid in a coil, the head is a small bread roll covered in pepperoni, and the wings are draped prosciutto. The middle of the coil holds the cheese and fruit. The book has the layout and all eight steps.

How many people does it serve?

12 to 15 as the main party food. It uses about 4 lb of meat and 3½ lb of cheese.

Can I make it ahead?

Shape and wrap the head and cut the cheese coins the day before. Lay the body about 2 hours before guests arrive. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
