Cheddar is named for a process, not a place — cheddaring is the stacking and turning of curd slabs to press out whey. That process makes a dense, low-moisture cheese that ages well. Six months in, it's mild and firm. At eighteen months to two years, the proteins have broken down and the flavor concentrates hard.

Label check: an age statement in months or years, not just "sharp" — the words sharp and extra sharp aren't regulated. Cloth-bound or bandage-wrapped means a drier, more complex cheese.
