Why it works

Five cheeses, each a different texture: crumbly aged cheddar, soft brie, crystalline Gouda, creamy blue and firm sheep's-milk Manchego. With that spread, no two bites on the board taste the same, which matters when people graze for two hours.

The colour does the decorating. Pomegranate, cranberries and red meats against bright green Castelvetrano olives and rosemary give you red and green without anything artificial. The honeycomb sits beside the Gorgonzola, and walnuts go next to it too: sweet and bitter-nutty are the two things blue cheese needs.

Timeline

  1. T–45 minTake all five cheeses out of the fridge.
  2. T–30 minFill the small bowls: fig jam, olives, cornichons.
  3. T–20 minPlace the cheeses and the honeycomb.
  4. T–10 minFold in the meats; add fruit, nuts and crackers.
  5. T–0Finish with rosemary and pomegranate seeds.

Questions

How many people does this board serve?

12 to 16 people as an appetizer, on a 24–30 inch board.

How far ahead can I build it?

Assemble up to two hours ahead, cover with plastic wrap and keep it cool. Add the crackers and pomegranate seeds at the last minute.

What's the most expensive item, and what can I swap?

Honeycomb and Bresaola cost the most. Swap honeycomb for a small pot of honey and Bresaola for a second salami.
