Why it works

The board sticks to one palette: red, pink, white and chocolate brown. Strawberries with their stems on, raspberries and pomegranate seeds do most of the color work, and bresaola and prosciutto keep the meats in the same shades.

Three cheeses cover creamy, sweet-salty and tangy: brie, caramel-like aged Gouda and chèvre drizzled with honey. The chocolate and berries make it a dessert board too, so it works after dinner or instead of it.

How do you cut a heart into brie?

Use a small heart cookie cutter or the tip of a paring knife to cut through the top rind only, then lift that piece of rind off.
