Why it works

Every cheese is paired with a Thanksgiving flavour sitting right next to it. Apple butter goes by the cheddar, cranberry by the brie, fig jam by the Gouda, and honeycomb by the Gorgonzola. Guests find the pairings without being told.

Two kinds of apple, sweet and tart, are fanned side by side so people can taste the difference against the cheddar. Pear and prosciutto go next to the brie, the most elegant bite on the board. Rosemary tucked through the gaps makes the whole thing smell like the kitchen.

This one serves 10 to 15 people as a pre-dinner board, on a 22–28 inch board.

How do I keep it from spoiling appetites before dinner?

Serve it 60 to 90 minutes before the meal and plan on 1 to 1.5 oz each of cheese and meat per person, not the usual 2–3 oz.

How do I stop the apples and pears going brown?

Slice them last and toss the slices in a little lemon juice or lemon-lime soda.
