The short version
Medjools are the large soft ones — caramel-textured, glossy, and sweet enough to read as candy. They do two jobs: sit on the board as fruit, and act as an edible cup for cheese. A split, pitted Medjool filled with goat cheese and wrapped in prosciutto is the most reliably popular single bite on any board.

The mechanism is concentrated sugar with almost no water. Fresh fruit resets the palate by rinsing; a date does the opposite — it coats. That's why it works against very salty, very funky things: blue cheese and cured pork have nothing that a date can't cover. It's also why one or two per person is enough.

1. Buy soft, glossy dates. Dull, hard, crystallised ones are old. 2. Split lengthwise on one side only — not all the way through. The date should open like a book and stay in one piece. 3. Pull the pit out. It comes cleanly from a soft Medjool. 4. Stuff, if you're stuffing: goat cheese, mascarpone, or blue, piped or spooned in. A nut on top. 5. Wrap in half a slice of prosciutto for the full version. 6. Serve 1–2 per person. They're very rich. 7. Fix: hard and dry? Steam them for two minutes or soak in warm water for ten, then pat dry. They come back most of the way.
