What it is
Manchego is DOP-protected and made only from Manchega sheep's milk in La Mancha. The basketweave pattern on the rind comes from the pleita — the woven esparto grass mold the cheese was traditionally pressed in — and it's now stamped into the plastic molds as a mark of authenticity.

How to prep it for the board
1. Cut it into thin triangular wedges with the rind on the outside edge — the traditional Spanish cut, and it shows off the rind pattern. 2. Temper 30 minutes. 3. Serve 1–2 oz per person. 4. Put membrillo directly on the board beside it, sliced into small slabs rather than spooned. It's firm enough to cut. 5. Don't eat the rind. It's inedible on Manchego, unlike bloomy cheeses. 6. Fan the wedges so the rind edges line up — it's the most visually distinctive cheese on most boards and worth arranging. 7. Fix: dry at the cut face after a few days?
