The short version

Young, unaged goat's milk cheese, usually sold as a log. Bright white, tangy, slightly chalky. It's the cheapest way to put real acidity on a board — and acidity is the thing most boards are short of.

What it is

Chèvre just means goat in French, but in a US cheese case it means the fresh, unaged version: goat's milk set with a culture and a little rennet, drained, and shaped. No rind, no aging, sold within days. Goat's milk has smaller fat globules and a different fatty acid profile than cow's milk, which is where the distinctive tang comes from.

How to prep it for the board

1. Temper 20 minutes. Cold chèvre is chalky and mute; warm, the tang and the grassiness come forward. 2. Slice the log with dental floss or a thin wire, not a knife — a blade drags and smears. Floss gives clean discs. 3. Or crumble it deliberately into a loose pile. Both look intentional; a half-smeared log doesn't. 4. Serve 1–2 oz per person. A 4 oz log serves three to four. 5. Drizzle honey over it before serving and add cracked pepper. Thirty seconds, and it stops being a plain white log. 6. Roll it in chopped herbs, pistachios or cracked pepper for a bigger upgrade — press the log into the mixture on a plate. 7. Fix: dry and crumbly at the ends? Trim them. The interior will be fine.
