Why it works
Fall flavour is mostly caramel, spice and earthy sweetness, and none of that needs meat or dairy. Roasting the delicata squash browns its sugars, and an aged, Gouda-style cashew cheese gives the same savoury depth an aged dairy cheese would.
Pumpkin seeds show up twice, blended into the dip and toasted whole, for creaminess and crunch from one ingredient. Apple and whole-grain mustard bring the acid, and fig jam and candied pecans the sweetness.
