Why it works
Antipasto works on contrast. Rich, fatty meats like mortadella and coppa sit next to sharp, tangy things from jars: pepperoncini, artichokes and roasted peppers. Every bite of meat gets reset by something bright.
The three cheeses cover three textures: crumbly, salty Parmigiano, soft and milky mozzarella, and firm, sharp provolone. Balsamic glaze over the Parmigiano and honey beside the provolone add the sweet notes, so the board doesn't need jam.

- T–60 minTake the Parmigiano out of the fridge.
- T–40 minTake out the provolone; drain the olives, artichokes and peppers.
- T–20 minTake out the meats and mozzarella; slice the focaccia.
- T–10 minBreak the Parmigiano into chunks; place the cheeses and fold the meats.
- T–0Fill the gaps with olives and almonds; drizzle oil and balsamic; add basil.

Questions
What's the difference between antipasto and charcuterie?
Charcuterie is mostly cured meat and cheese. Antipasto, the Italian starter course, adds marinated and pickled vegetables, olives and bread, so it's lighter and brighter.
How many people does this antipasto board serve?
8 to 12 people on a 20–26 inch board. As the main party food, plan about 3 oz each of meat and cheese per guest.
Can I make it ahead?
Drain the jarred vegetables and cut the hard cheeses up to a day ahead and keep them covered in the fridge. Assemble within an hour of serving and leave it out no more than 2 hours.
