For 10 people, buy about 1¼ lb of cured meat and 1½ lb of cheese, 60–80 crackers, 1¼ lb of fruit and 2 spreads as an appetizer before a meal. If it's the party food, go up to 2 lb of meat and 2 lb of cheese; if it's dinner, 2½ lb of meat and 2½ lb of cheese.

One 16–18 inch board. Keep bowls for olives, jams and honey on the board so nothing rolls into the crackers. See board sizes.

Timeline

  1. 2–3 days beforeBuy crackers, nuts, jams and anything shelf-stable.

  3. The night beforeCut the firm cheeses, cover and chill. Wash the grapes.
  4. 1 hour beforeTake the aged and firm cheeses out so they can warm up. Leave soft cheese like brie in the fridge for now.
  5. 30–45 minutes beforeTake out soft cheese like brie (it needs only 20–30 minutes), then build the board: cheese first, then meat, then bowls, crackers and fruit.
  6. While it's outKeep it out no longer than 2 hours, then refrigerate what's left.
