Why it works
Holiday boards are about abundance and colour, and both are easy without dairy or meat. Pomegranate, cranberries and red pears against green rosemary give the red-and-green look, and roasted chestnuts are the one ingredient everyone connects with December.
Three nut cheeses cover the textures a dairy board would: a spreadable herbed one, a sweet cranberry-walnut one, and a vegan brie. Whole-grain mustard and a thread of pomegranate molasses bring the acid that keeps the rich spreads from getting heavy.
