Why it works

A board for two should be small and a little luxurious. Rich, buttery macadamias and a creamy aged cashew brie feel indulgent, and a truffle cashew cream adds the earthy, special-occasion note.

Champagne grapes, pear and pomegranate bring crisp sweetness that matches sparkling wine, and dark chocolate with a pinch of salt is the ending. Edible flowers make it look like you tried much harder than you did.

Timeline

  1. T–20 minTake the cashew brie and truffle cream out of the fridge; chill the bubbles.
  2. T–10 minPlace the cheeses; spoon the truffle agave into a tiny bowl.
  3. T–5 minSlice the pear; snip the champagne grapes into small clusters.
  4. T–2 minAdd crackers, flatbread, macadamias and chocolate.
  5. T–0Scatter pomegranate, flowers and rose petals; pour the wine.

The seven-step placement plan (what goes where, and why) is in the book.
