Why it works

Good dessert boards have contrast just like savoury ones. Bitter dark chocolate, sweet caramel and light, airy coconut cream give three different dips, and tart raspberries keep the sweetness from becoming too much.

A pinch of flaky salt on the caramel and the stuffed dates is the trick. Salt makes sweet things taste rounder and less sugary, the same reason salted caramel works.

Timeline

  1. T–20 minWarm the chocolate sauce gently; whip the coconut cream.
  2. T–15 minStuff the dates with almond butter; halve the figs.
  3. T–10 minFill bowls with the three dips; place them on the board.
  4. T–5 minAdd the cookies, berries and figs around the bowls.
  5. T–0Scatter pecans and chocolate; finish with salt, mint and rose petals.

The seven-step placement plan (what goes where, and why) is in the book.
