The short version

The mechanism is restraint. Most dessert bases are sweet enough to dominate what sits on them; a graham cracker is only faintly sweet, so it reads as a wholemeal cracker with a hint of honey. That leaves room for the cheese to lead, which is why it works where a cookie wouldn't.

1. Break them along the scored lines. A full sheet is four crackers. 2. Fan them near the sweet corner and near the cream cheese. 3. Keep them dry. They go soft faster than a water cracker. 4. Serve 1 oz per person — two or three broken pieces. 5. Buy plain honey, not cinnamon or chocolate, for a cheese board. 6. Use them for the cheesecake corner — cream cheese, berries, honey. 7. Fix: soft? 300°F for five minutes and cool completely. They re-crisp well.
