Is Parmesan vegetarian?

No (Parmigiano-Reggiano)

Parmigiano-Reggiano isn't vegetarian. Its official recipe requires calf rennet. Some cheeses sold as "parmesan-style" or "Italian hard cheese" use microbial rennet and say vegetarian on the label.

Rennet is the enzyme that turns milk into curd. Traditionally it comes from the stomach of a young calf. Protected cheeses like Parmigiano-Reggiano have to follow their official recipe, and that recipe calls for calf rennet, so no genuine Parmigiano-Reggiano is vegetarian.

Grana Padano and Pecorino Romano are in the same position. The Vegetarian Society also lists Gruyère, Gorgonzola, Manchego, Emmental, Camembert, Raclette and Roquefort as usually not vegetarian.

  • "vegetarian" on the package
  • "microbial", "vegetable" or "non-animal" rennet
  • pesto and cheese crisps, which often use Parmigiano-Reggiano
