What to look for on the label

Label check: Sheep's milk, or sheep's and goat's milk, and packed in brine. "Greek" and the PDO mark mean traditional feta. Cow's milk feta is milder and firmer.

Skip: Pre-crumbled feta for the board itself. It's dry and won't hold a shape. Keep crumbles for salads and whipped feta.

Serving it: feta is a fresh cheese, so take it out of the fridge 15 to 20 minutes before serving. Pat the block dry, cut it into cubes or break it into rough chunks, and finish with olive oil, oregano or honey.
