Why it works

Halloumi is the one cheese that's best hot: grilled, it turns golden outside and squeaky inside. Briny feta gives you a cold, salty contrast, and hummus and tzatziki give you two dips with very different textures.

Dolmas, Kalamata olives and roasted peppers add the savory notes that meat usually brings, and cucumber and tomatoes keep it fresh. Dried apricots or figs and pistachios finish it, with a Greek Assyrtiko or dry rosé.

Timeline

  1. T–30 minMake or plate the dips; take the feta out of the brine.
  2. T–20 minSlice the cucumber and halve the tomatoes.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

What goes on a Mediterranean board?

Grilled halloumi, feta, hummus, tzatziki, dolmas, Kalamata olives, cucumber, cherry tomatoes, roasted red peppers, warm pita, dried apricots or figs and pistachios.

Is this board vegetarian?

It has no meat. Some cheeses are made with animal rennet, so check labels if you're strictly vegetarian.

How do you cook halloumi?

Slice it about ½ inch thick and cook in a dry nonstick pan over medium-high heat for 1 to 2 minutes a side until golden. Serve right away.
