Why it works
A first date board should be safe and still feel special. Firm, nutty Manchego and soft, mild brie give two very different first bites, and neither is an acquired taste. Each meat sits by the cheese it suits: delicate prosciutto with the brie, peppery soppressata with the Manchego.
Buttery Castelvetrano olives, sweet apricots and grapes, and a little honey and Dijon give every rich bite something to reset it. Dry bubbles like Cava or Prosecco do the same job in the glass and make the night feel like an occasion.
Timeline
- T–45 minTake the manchego out of the fridge.
- T–25 minTake out the brie.
- + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.
Questions
What do you put on a first date charcuterie board?
Keep it to two approachable cheeses (Manchego and brie), two meats (prosciutto and soppressata), mild olives, almonds, a little fruit, honey, mustard and two kinds of crackers. Nothing too strong or messy.
How much charcuterie do you need for two people?
About 3 oz of cheese and 3 oz of meat per person when the board is the snack, plus crackers, fruit and nuts. Before dinner, buy about a third less.
What wine goes with a first date board?
Cava or Prosecco. Dry bubbles cut through salty, rich bites and feel festive without being over the top. Sparkling water with lemon or a light rosé work too.
