Why it works
Aged Manchego and Taleggio are a deliberate pair: one firm, nutty and dry, the other soft, savory and pungent in the best way. Silky San Daniele prosciutto and lean, beefy bresaola give the same kind of contrast on the meat side.
Honeycomb, fig jam and Medjool dates soften the stronger flavors, and cornichons and Marcona almonds keep it from getting too sweet. A structured red like Nebbiolo or red Burgundy has the acidity to stand up to all of it.
Timeline
- T–60 minTake out the manchego. Open the red wine to breathe.

Questions
What should be on an anniversary charcuterie board?
Two cheeses with real character (aged Manchego and Taleggio), two refined meats (prosciutto and bresaola), honeycomb, fig jam, dates, almonds, cornichons, grapes, walnut bread and water crackers.
What wine goes with this board?
Nebbiolo (Barolo or Langhe Nebbiolo) or a red Burgundy. Both have enough acidity to cut the rich cheese and enough flavor to match the cured meats.
Is Taleggio strong?
It smells stronger than it tastes. The paste is mild, buttery and a little tangy. Take it out of the fridge about 30 minutes before serving so it softens.
