Quick Answer: A bagel board is a brunch spread of sliced bagels, flavored cream cheeses, smoked salmon and fresh toppings that guests build themselves. Plan 1 to 1½ bagels per guest (or 2 to 3 minis), about 2 oz of cream cheese and 1½ to 2 oz of lox per guest. Add capers, red onion, tomato, cucumber, lemon and dill, plus a sweet corner with jam, butter and fruit. Slice everything the night before and build the board 30 minutes before guests arrive.
A bagel board is the easiest brunch you can host: there's no cooking, everyone builds exactly what they like, and it looks generous with very little work. It works for holiday mornings, showers, birthdays and the morning after a big party, and it's the brunch version of a charcuterie board, with lox in place of salami.

Lox, Nova or gravlax? All three are thin, silky cured salmon that drapes on a bagel. Nova is cold-smoked, gravlax is cured with dill and not smoked, and the word "lox" is often used for either. Hot-smoked salmon is flaky and cooked-tasting, so serve it in chunks. Our best smoked salmon guide ranks the grocery-store options, and why smoked salmon and cream cheese work explains the classic pairing.
How to lay out a bagel board
- Use a big board or a sheet pan. A 20-inch board or a large tray holds a bagel bar for 12. For 20, use two boards or a long table.
- Bowls first. Spoon each cream cheese into its own bowl with its own spreader, and put capers in a small dish. Spread the bowls out across the board.
- Bagels along one edge. Slice them and stack them in a row or in a basket at the start of the line, so guests take a bagel first.
- Salmon in the middle. Drape it in loose folds on a chilled plate or next to an ice pack under the board, and add it last.
- Fresh toppings around the salmon. Fan the tomato and cucumber slices, separate the onion rings, and tuck in lemon wedges and dill.
- Sweet corner at the far end, with jam, butter and fruit, so it doesn't mix with the fish.
- Toaster nearby. If you can, put a toaster at the end of the line for guests who want their bagel warm.
Make-ahead timing
- The night before: slice the bagels and store them in a sealed bag. Slice the tomatoes, cucumbers and onion, hard-boil the eggs, wash and dry the fruit, and spoon the cream cheese into serving bowls. Cover everything and refrigerate.
- 30 minutes before: take out the cream cheese so it spreads easily, and build the board.
- Right before guests arrive: add the salmon.
- Once it's out: serve within 2 hours, or 1 hour above 90°F. Keep the salmon on ice or refill it from the fridge.
Food-safety notes
Smoked salmon is perishable, so it's the last thing on the board and the first back in the fridge. For pregnant guests, US and UK guidance advises avoiding refrigerated smoked fish unless it's cooked until steaming hot, so offer a cooked option like baked salmon, plus eggs and plenty of other toppings. See our pregnancy-safe board guide for details.
FAQ
How many bagels do I need per person?
Plan 1 to 1½ regular bagels per guest, or 2 to 3 mini bagels. Slice them before serving so guests can take a half, which stretches the count further.
How much cream cheese for a bagel board?
About 2 tablespoons (1 oz) per bagel half that gets a schmear, so roughly 2 oz per guest. For 12 guests, buy about 1½ lb across two or three flavors.
How much lox or smoked salmon per person?
About 1½ to 2 oz of smoked salmon per guest when it's one of several toppings. For 12 guests, that is about 1½ lb.
What goes on a bagel board?
Sliced bagels, two or three cream cheeses, smoked salmon, capers, thinly sliced red onion, tomatoes, cucumbers, lemon wedges and fresh dill, plus a sweet side with jam, butter and fruit. Hard-boiled eggs and bacon make it more filling.
Is a bagel board with lox safe for pregnant guests?
US and UK guidance advises pregnant people to avoid refrigerated smoked fish unless it is cooked until steaming hot. Offer a cooked option such as baked salmon or hot-smoked salmon heated through, plus eggs and plenty of other toppings.
