The short version

What it is
Camembert de Normandie has been made since the late 1700s and comes in a small round wooden box — not decoration, but a functional container that lets the cheese breathe while holding its shape as it softens. The wheels are about 250g, far smaller than a brie, which means more rind surface relative to paste.

Surface-to-volume ratio is the mechanism. The rind mold does the ripening, and a Camembert wheel has much more rind per ounce of cheese than a wide flat brie. More rind means more enzymatic breakdown, which means more flavor — that's the entire difference between the two cheeses, and it's geometry rather than recipe.

How to prep it for the board
1. Temper for 45–60 minutes. Same rule as brie, same reason, and even more payoff — the aromatics here are worth releasing. 2. Cut wedges from the center out. Small wheels mean small wedges; six to eight per wheel is right. 3. Serve 1–2 oz per person. One 250g wheel covers four to six as part of a board. 4. Eat the rind. More so than with brie — the rind is where the mushroom note lives. 5. Bake it in the box. Remove any plastic, score the top, bake at 350°F for 15 minutes and serve molten with bread. It's the best thing you can do with a supermarket Camembert. 6. Keep it away from the fresh cheeses. It's pungent enough to affect anything mild sitting next to it. 7. Fix: if it smells strongly of ammonia, it's over-ripe. A faint whiff on opening that fades in ten minutes is normal; a persistent sharp smell is not.

Label check: press gently. It should give evenly across the whole surface. A wheel that's firm in the middle needs more time; one that's collapsing and smells of ammonia is past it.
