Why it works

Brunch boards work when there's a savoury side and a sweet side. Avocado with flaky salt and vegan cream cheese on bagel crisps is the savoury corner; almond butter, banana, berries and jam are the sweet one.

Granola clusters and toasted walnuts add crunch to the soft fruit and spreads, and a dusting of cinnamon on the banana with a drizzle of agave makes it taste like dessert for breakfast.

Timeline

  1. T–20 minTake the vegan cream cheese out of the fridge; toast the sourdough.
  2. T–15 minFill bowls with the spreads and jam; wash the berries.
  3. T–10 minPlace the bagel crisps, toast and granola around the bowls.
  4. T–5 minSlice the banana; dust it with cinnamon.
  5. T–0Slice the avocado last, sprinkle with salt, and serve.

The seven-step placement plan (what goes where, and why) is in the book.
