The short version
The most common jam in America, and an underrated cheese partner. Fig jam gets all the board credit, but strawberry is brighter and more acidic, which makes it better against rich, creamy cheese. Spoon it next to brie or goat cheese and it's a dessert bite that kids and adults both reach for.
What it is
Strawberry jam is strawberries cooked with sugar until the fruit's pectin sets into a spreadable gel. Many brands add a little lemon juice or extra pectin. Preserves keep large pieces of fruit; jam is smoother; fruit spreads use juice concentrate instead of some or all of the sugar.
- Taste
- sweet and bright, with a tart berry finish
- Texture
- soft, spreadable gel, smooth or chunky
- Look
- glossy ruby red, sometimes with whole berries and seeds
The set is chemistry. Pectin chains in the fruit need sugar to pull water away and acid to cancel their negative charges so they can link up into a gel. Strawberries are fairly low in pectin, so most recipes add lemon or pectin. That added acid is also why strawberry jam tastes brighter than fig jam, and acid is what slices through butterfat.
What it pairs with — and why
| Pair it with | Why it works |
|---|---|
| Brie | Bright, tart fruit cuts through a creamy, buttery cheese. |
| Fresh chevre | Tangy goat cheese and sweet berries, like strawberry cheesecake. |
| Sharp aged cheddar | Sweet against salty and sharp, the PB&J of cheese. |
| Mascarpone | Strawberries and cream for a dessert board. |
| Shortbread or butter crackers | Buttery, crumbly bases for a sweet spoonful. |
| Prosecco, rosé or a sweet Riesling | Bubbles and fruit match berries. |
Skip it with: strong blue cheese. Strawberry is too delicate for gorgonzola or stilton; honey or fig jam handle blue better.
How to prep it for the board
- Spoon it into a small bowl. Jam on the board itself runs into the crackers.
- Stir it so it loosens into a softer, glossier spread.
- Serve about a tablespoon per person.
- Add a small spoon or spreader so guests don't dip crackers in.
- Place it beside the brie or goat cheese so the pairing is obvious.
- Fix: if it's too stiff, stir in a teaspoon of warm water or lemon juice.

Quick FAQ
Is strawberry jam good on a charcuterie board?
Yes. Its bright acidity cuts rich cheeses like brie and goat cheese, and it's the jam kids recognize.
What's the difference between jam and preserves?
Jam is made from crushed fruit and is smooth. Preserves have whole or large pieces of fruit, which look prettier on a board.
What cheese goes best with strawberry jam?
Brie, fresh goat cheese, mascarpone and sharp cheddar. Creamy and tangy cheeses both work.
How much jam do I need for a board?
About a tablespoon per person. A small 4 oz bowl covers a board for eight.
Is strawberry jam vegan?
Usually. Jam is fruit, sugar and pectin. Check that the label doesn't list gelatin.
