Is salami gluten-free?

Most salami is gluten-free: pork, salt, spices and a starter culture. Some brands add wheat-based binders, fillers or seasonings, so read the full ingredient list before serving it to a guest with celiac disease.

Traditional dry salami is made from ground meat, fat, salt, spices and a curing culture. None of those contain gluten. The risk is in what some producers add: binders, fillers or seasoning blends that can contain wheat or barley.

Salami is a meat product, regulated by the USDA rather than the FDA. The National Celiac Association advises reading labels on any processed meat, like sausages and pre-seasoned meats, and asking deli staff about cross-contact. Not every meat label has a "Contains" line, so read the whole ingredient list.
