Why it works
Churrasco is about beef and fire, so picanha sits at the center with its fat cap grilled crisp, joined by garlicky linguiça and salty carne seca. Queijo coalho is a firm cheese made for the grill: it browns and softens without melting, and pão de queijo and creamy requeijão give the cheese side two softer textures.
Everything else is there to cut the richness. Chimichurri and molho à campanha bring vinegar and fresh herbs, grilled pineapple adds sweet-tart juice (a churrascaria classic), and passion fruit and lime keep things bright. Farofa, cassava chips and Brazil nuts add crunch.

Questions
Where can I buy picanha and queijo coalho?
Ask a butcher for top sirloin cap with the fat left on; some call it coulotte or rump cap. Queijo coalho and requeijão are sold at Brazilian and Latin markets and online. Halloumi is the easiest stand-in for coalho.
What is farofa?
Toasted manioc (cassava) flour, often cooked in butter with onion or bacon. Brazilians sprinkle it over grilled meat for crunch. Buttered toasted breadcrumbs work in a pinch.
What should I drink with a churrasco board?
A caipirinha, made with cachaça, lime and sugar, is the classic. For wine, a juicy red like Malbec stands up to the grilled beef.
Can I make it ahead?
Make the chimichurri and vinaigrette a day ahead and chill them. Grill the meat and cheese just before serving; coalho firms up as it cools, so serve it warm.
