The short version

Unleavened flour-and-water bread, rolled flat, docked and baked fast. It's a clean, neutral, extremely cheap cracker that happens to be associated with one holiday — and there's no reason at all not to use it on a board in October.

What it is

Matzo is made under a time constraint: from the moment water touches flour, the dough must be mixed, rolled, docked and baked in under eighteen minutes, before fermentation can begin. That's a religious requirement, and it also produces a very particular cracker — no yeast, no rise, no flavor development beyond the bake itself.

Speed is the mechanism, and its side effect is neutrality. With no fermentation there are no sour or yeasty notes, and with no fat there's nothing to coat the palate. How to prep it for the board

1. Break each sheet into rough quarters or sixths. A full sheet is far too big, and torn edges look far better than cut ones. 2. Serve about one sheet per person, broken — so four to six pieces each. 3. Warm it 3 minutes at 300°F. Matzo out of the box is fine; warm matzo is noticeably better, and almost nobody does this. 4. Try it brushed with olive oil and salt before warming. It becomes a different and much better cracker. 5. Stand a few large shards upright. It's rigid enough to hold, and the pale blistered surface looks good in profile. 6. Use it year-round. The only reason it isn't a standard board cracker is habit. 7. Fix: it's bone dry already. Humidity softens it and a low oven fixes it completely.
