The short version

The same idea as a parmesan crisp, made with cheddar. Tangier, more orange, more fragile, and closer to the flavor of a cheese cracker without the cracker. Best next to apple, mustard and anything with heat.

Shredded cheddar baked until the fat renders, the proteins brown, and the water leaves. Cheddar has more moisture and less protein structure than parmesan, so the crisp puffs more, browns faster and breaks more easily.

1. Use its own dish. Cheddar crisps release more oil than parmesan ones and will stain a wooden board. 2. Serve 3–4 per person as an accent. 3. Put them at the opposite end from the cheddar wedge. Two versions of one flavor next to each other reads as an accident. 4. Handle them gently. They're the most fragile item on any board — the box is usually half broken by the time you open it. 5. Homemade is better and easy: tablespoon mounds of shredded sharp cheddar on parchment, 400°F for 6–8 minutes until the bubbling stops and the edges are deep brown. Cool completely before moving them. 6. Fix: they soften fast in a warm room. 2 minutes at 325°F, cool fully, and they snap again.
