The short version

Dry-cured, cold-smoked ham from the Black Forest, with a near-black exterior from fir and pine smoke. Firmer and smokier than prosciutto. Be aware that most American "Black Forest ham" is a wet-cured, cooked deli ham with nothing in common with it.

What it is

Schwarzwälder Schinken PGI is boned pork leg, dry-salted with garlic, coriander, juniper and pepper, cured for weeks, then cold-smoked over fir brush for several more, then aged. The smoke and the seasoning darken the exterior to near-black — the name describes the ham's colour and its home.

Cold smoke over weeks is the mechanism. Unlike hot-smoked deli ham, which is cooked, Schwarzwälder Schinken is smoked at low temperature over a long period — it stays raw and continues to cure. That's why the real thing is sliced thin like prosciutto rather than layered like sandwich ham.

How to prep it for the board

1. Buy the dry-cured PGI version if you can. The American deli slice is a different food, and if that's what you have, treat it as sandwich ham. 2. Slice thin. Real Black Forest ham is firm; a thick slice is chewy. 3. Fold into loose quarters. It holds a fold better than prosciutto. 4. Temper 20 minutes. 5. Serve 1–2 oz per person. 6. Acid beside it — cornichons, pickled onion, mustard. 7. Fix: if it tastes flat and wet rather than smoky and firm, it's the cooked deli version. Nothing to fix; buy the dry-cured one next time.
