Is prosciutto gluten-free?

Yes

Yes. Prosciutto is a whole pork leg cured with salt and air-dried. There's no wheat in it. The gluten risk on a board comes from crackers and bread touching it, not the ham.

Whole-muscle cured meats are the safest meats on a gluten-free board. Prosciutto di Parma, prosciutto San Daniele, jamón serrano, bresaola and coppa are all made from a single cut of meat, salt and time.

The problem is the board. Prosciutto is often draped across crackers or wrapped around breadsticks. Keep it on its own section, use tongs, and give gluten-free crackers their own plate.

What to check

  • pre-sliced packs: a glaze or seasoning is rare but possible
  • deli slicing: ask for a clean slicer
  • the board: no crackers or breadsticks touching it
