Is pepperoni gluten-free?

Usually, but check

Most pepperoni is gluten-free. It's a cured sausage of pork, often beef, salt, paprika and chili. A few brands add fillers or seasoning blends that can contain wheat, so read the ingredient list before serving it to a guest with celiac disease.

Pepperoni is made like any dry salami: ground meat and fat, salt, spices and a curing culture, then dried. None of those contain gluten. The risk is in added binders, fillers or flavorings, and in pepperoni sold already on a pizza.

Big brands make this easy. Boar's Head says all of its meats are gluten-free, and Hormel labels its pepperoni gluten-free on the package. Pepperoni is a meat product regulated by the USDA, so not every label has a "Contains" line: read the whole ingredient list.

What to check

  • wheat, barley, rye or malt in the ingredient list
  • a "gluten-free" claim on the package
  • pizza and pre-made snack packs: the crust or crackers are the problem, not the pepperoni

What to use instead

If you can't read a label, use a whole-muscle cured meat instead. They're just meat, salt and time.
