The short version

A small goat's-milk cheese shaped like a pyramid with its top cut off, coated in grey vegetable ash. Bright, lemony and dense when young; softer and nuttier with age. It's a genuine sculpture, and it does more for a board's composition than any garnish.

What it is

Valençay AOP comes from the Berry region of the Loire. The truncated pyramid shape is traditional; the popular story is that Napoleon, returning from a failed Egyptian campaign, struck the top off a pyramid-shaped cheese at the Château de Valençay. It's a good story and almost certainly not true — but the shape is real and protected.

Ash is the mechanism, and it's functional as well as decorative. Vegetable ash lowers the surface acidity of a fresh goat cheese, which lets rind molds establish and slows moisture loss. The grey-blue bloom that develops over the black is the mold doing its work — a well-aged Valençay looks dusty, not uniformly black.

Skip it with: blue cheese and other strong cheeses, and heavy jams. This is a delicate, expensive cheese and it's easily overwhelmed.

How to prep it for the board

1. Serve it whole, or cut one wedge and leave the rest standing. The pyramid is the point — cutting it all into slices throws away what you paid for. 2. Cut from the apex down in thin wedges, like a tiny cake. 3. Temper 30 minutes. 4. Serve 1–1.5 oz per person. These are small cheeses — one pyramid serves four to six. 5. Give it height on the board. It's one of the few cheeses that stands up, so put it where the board is flat. 6. The ash and rind are edible. Say so. 7. Fix: if it's uniformly chalky, it's young. That's a legitimate style — serve it and enjoy the lemony freshness rather than waiting.

Label check: the AOP mark and a rind showing grey-blue bloom over the black ash. A uniformly black, matte surface means it's very young.

Skip: buying it for a large board. It's small and expensive — use it as a single sculptural piece, not as volume.
