What it is
Truffle cheeses are usually a semi-firm sheep's or cow's-milk base — pecorino, gouda or a soft-ripened cheese — with truffle pieces folded into the curd. The aroma is dominated by 2,4-dithiapentane, a sulphur compound that occurs naturally in truffles and is also manufactured cheaply for use in truffle oil and flavoring.

The synthetic aroma question is the mechanism worth understanding. Real truffle loses most of its aroma within days and costs a fortune; 2,4-dithiapentane is stable, cheap and smells overwhelmingly of truffle. Almost all affordable truffle cheese uses it, often alongside a small quantity of real truffle for the visible flecks. That doesn't make the cheese bad — but it explains why a $20 wedge smells as strong as a $200 tuber.

How to prep it for the board
1. Serve about 1 oz per person. It's intense and expensive. 2. Cut into thin slices or small wedges so the black flecks show in cross-section. 3. Temper 30 minutes — the aroma is the product and cold suppresses it. 4. Put it at one end of the board with its own knife. Truffle aroma transfers to everything and lingers on a blade. 5. Serve it early in a tasting order. Nothing tastes quite the same afterwards. 6. Keep it double-wrapped in the fridge or the whole shelf will smell of it. 7. Fix: if the aroma has faded, the cheese is old. Unlike most cheeses, truffle cheese gets less interesting with time.

Label check: read the ingredient list. Real truffle appears as "black truffle" with a percentage; synthetic aroma appears as "truffle flavoring" or "aroma." Many cheeses have both.
