The short version

Cheese studded with black truffle flecks and an aroma nobody mistakes for anything else. It's the most reliably impressive thing you can put on a board — and most of what's sold is flavored with a synthetic compound rather than with truffle.

What it is

Truffle cheeses are usually a semi-firm sheep's or cow's-milk base — pecorino, gouda or a soft-ripened cheese — with truffle pieces folded into the curd. The aroma is dominated by 2,4-dithiapentane, a sulphur compound that occurs naturally in truffles and is also manufactured cheaply for use in truffle oil and flavoring.

Taste
earthy, mushroomy, garlicky, savory, intense
Texture
depends on the base — semi-firm and sliceable, or soft and spreadable
Look
pale paste flecked with visible black specks

The synthetic aroma question is the mechanism worth understanding. Real truffle loses most of its aroma within days and costs a fortune; 2,4-dithiapentane is stable, cheap and smells overwhelmingly of truffle. Almost all affordable truffle cheese uses it, often alongside a small quantity of real truffle for the visible flecks. That doesn't make the cheese bad — but it explains why a $20 wedge smells as strong as a $200 tuber.

What it pairs with — and why

Pair it withWhy it works
Crostini and plain breadNothing should compete with an aroma this dominant.
HoneySweetness against earthy sulphur. Truffle honey doubles down; plain honey balances.
ProsciuttoSalt and cure with mushroom and earth.
Fresh pearCool and sweet, cutting the intensity.
WalnutsTannin and earth, both of which the truffle aroma already gestures at.
Champagne or NebbioloAcid or structure. Truffle and Barolo is a classic Piedmontese pairing.
Scrambled eggs, elsewhere in the mealWorth knowing: truffle cheese melted into eggs is better than most truffle dishes.

Skip it with: blue cheese and smoked cheese — three assertive aromas in one place and none of them win. Also skip serving two truffled items on one board.

How to prep it for the board

1. Serve about 1 oz per person. It's intense and expensive. 2. Cut into thin slices or small wedges so the black flecks show in cross-section. 3. Temper 30 minutes — the aroma is the product and cold suppresses it. 4. Put it at one end of the board with its own knife. Truffle aroma transfers to everything and lingers on a blade. 5. Serve it early in a tasting order. Nothing tastes quite the same afterwards. 6. Keep it double-wrapped in the fridge or the whole shelf will smell of it. 7. Fix: if the aroma has faded, the cheese is old. Unlike most cheeses, truffle cheese gets less interesting with time.

Label check: read the ingredient list. Real truffle appears as "black truffle" with a percentage; synthetic aroma appears as "truffle flavoring" or "aroma." Many cheeses have both.

Skip: buying truffle cheese for a board that already has a truffle honey or truffle salami. One truffled item per board.

Quick FAQ

Is truffle cheese made with real truffles? Usually a small amount, for the visible flecks — but the aroma almost always comes from 2,4-dithiapentane, a synthetic compound. Check the ingredient list.

Does that make it bad? No. It's a legitimate, widely-liked cheese. It just isn't the same thing as fresh truffle, and it shouldn't cost as if it were.

Which truffle cheese should I buy first? Sottocenere al Tartufo, or Truffle Tremor if you prefer goat cheese.

How much per person? About 1 oz. It's strong.

Why does the aroma fade? The aromatic compounds are volatile. Truffle cheese is one of the few cheeses that's best young.
