How to read a Spanish ham label
- Serrano comes from white pigs. The Consorcio Serrano seal guarantees Spanish origin and at least 12 months of curing.
- Ibérico comes from black Iberian pigs and is graded by seal color: black (100% Ibérico, acorn-fed), red (acorn-fed, mixed breed), green (free-range, grain-fed) and white (grain-fed).
- "Pata negra" may only be used on the black-seal grade.
- On the board: take packs out 30 minutes early, serve at room temperature and lay slices flat or in loose folds. About 1 oz per guest when it's one of several meats.
Compare it with Italian ham in prosciutto vs. serrano, and build a Spanish board with Manchego and chorizo.
Spanish ham questions
What's the difference between serrano and Ibérico?
Serrano is made from white pigs. Ibérico comes from black Iberian pigs, at least 50% Iberian breed, and is graded by seal color from white (grain-fed) to black (100% Ibérico, acorn-fed bellota).
Serrano vs prosciutto: what's the difference?
Both are dry-cured hams from white pigs. Serrano is usually cured longer, so it's drier, deeper in color and stronger in flavor. Prosciutto di Parma is softer and sweeter.
How do I serve jamón on a charcuterie board?
At room temperature: take the pack out about 30 minutes early. Lay the slices flat or in loose folds rather than stacked, and pair them with Manchego, Marcona almonds and olives.
How much jamón per person?
About 1 oz per guest when it's one of two or three meats. A 14 lb bone-in leg serves about 20 people as a main appetizer.
Does jamón need to be refrigerated?
Sliced packs, yes: keep them cold until 30 minutes before serving. A whole leg on a stand is kept at room temperature, covered with its own fat or a cloth, and used up within a few weeks.
