Why it works

Truffle is shaved at the table over the Comté and the triple-crème, which is the moment people remember. Aged Comté, truffle pecorino and pungent Époisses already share earthy, savory notes with truffle, so it makes them taste bigger.

Jamón ibérico, with its marbled fat, carries the truffle aroma beautifully, and lean bresaola gives a deep-red contrast. Truffle honey on the triple-crème is the single best bite on the board.

Timeline

  1. T–45 minTake out all the cheeses; prep the truffle.

Questions

What cheese goes with truffle?

Aged Comté, Pecorino, Époisses and triple-crème cheeses. A truffle-studded pecorino puts it right in the cheese.

Do I need a fresh truffle?

No. A jarred truffle, truffle cheese and truffle honey give the flavor for much less. Fresh black truffle is the splurge.

What wine goes with it?

Nebbiolo, aged Champagne or a white Burgundy.
