Why it works
Jamón serrano, prosciutto di Parma, smoked salmon and a little domestic caviar come from regular stores, and a triple-crème, 24-month Parmigiano and truffle cheese make the cheese course. Edible gold leaf and luster dust are what turn it into a showpiece.
On a black marble slab, the gold catches the light. It's built for milestone birthdays, anniversaries, engagement parties and New Year's Eve.
Timeline
- Day beforeChill the champagne and the caviar (in the coldest part of the fridge, unopened). Buy the bread and toast the crostini.
- 2 hours beforeGild the cheese and the honeycomb. Break the Parmigiano into chunks.
- + 2 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.
Questions
Where do you buy edible gold leaf?
Baking supply stores and online. Make sure it's labeled food-grade edible gold, not craft gold.
How much does it cost?
About $250 to $350 for 12 to 15 people, mostly for the jamón, caviar and cheeses.
Can I make it ahead?
Prepare everything except the gold the day before. Apply the gold leaf just before serving. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
