Why it works
Manchego with membrillo (quince paste) is the most famous Spanish pairing: the sweet, firm paste against the nutty, salty sheep's milk cheese. A second cheese, buttery Mahón or smoky Idiazabal, gives you a contrast.
Jamón serrano and dry chorizo cover the meat, and Marcona almonds, olives and piquillo peppers fill out the tapas. Rubbing a ripe tomato and garlic on toasted bread makes pan con tomate. Fino sherry or a Rioja Crianza to drink.
