Why it works

This board is built to be finished early so you aren't plating while your nerves kick in. The luxuries are in small quantities: jamón ibérico, a triple-crème Brillat-Savarin, 18-month Comté and an optional spoon of caviar or trout roe on blinis with crème fraîche.

Fresh figs, champagne grapes, truffle honey and chocolate truffles round it out, so there's something to celebrate with whichever way the night goes. Vintage Champagne or a Crémant is the obvious pour.

Timeline

  1. Day beforeOrder the jamón and caviar. Chill the Champagne. Check where the ring is.
  2. T–60 minTake out the Comté.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

What do you serve on a proposal night?

Something you can prepare ahead and that feels special: a small board of luxury cheese and ham, blinis with crème fraîche and roe, fresh figs, truffle honey and chocolate truffles, with Champagne.

Do I need real caviar?

No. Trout or salmon roe gives the same pop and color for far less, and the board works without either.

How far ahead can I build it?

Prep everything earlier in the day and keep it covered in the fridge. Assemble about 30 minutes before, and keep it out no longer than 2 hours.
