Why it works

A picnic board has to survive the trip, so it uses sturdy, cool-weather-proof choices: aged cheddar or Gouda, Genoa salami, mozzarella pearls packed in their liquid, and snap peas and cherry tomatoes that don't wilt.

Melon and strawberries make it summery, and prosciutto wrapped around melon is the classic pairing. Pesto does double duty as a dip for the snap peas and a sauce for the mozzarella. Dry rosé or a chilled light red to drink.

Questions

What's a good picnic charcuterie board?

Firm cheese and fresh mozzarella, salami and prosciutto, cherry tomatoes, melon, strawberries, snap peas, pesto and sturdy crackers.

How do you keep a picnic board safe?

Pack it in a cooler with ice packs and keep it out no more than 2 hours, or 1 hour if it's above 90°F.

Should I build it at home or at the picnic?

Pack everything in containers and build it on site. It takes about 10 minutes and nothing gets crushed.
