Why it works
This is a dessert board that still counts as charcuterie. A Stilton-style blue and a triple-crème brie are the two cheeses that love sweet things most, and prosciutto and fennel salami bring just enough salt.
Dark chocolate, dried figs, candied pecans, honey and shortbread are classic partners for blue cheese. Tawny or ruby port is the traditional match: its sweetness softens the blue and makes the chocolate taste richer.

Questions
What goes with port and cheese?
Blue cheese is the classic pairing, especially Stilton. Add dark chocolate, dried figs, candied pecans, honey and shortbread.
Is this a dessert board?
Mostly. It's built for after dinner or late at night, so the portions are small and the sweets do as much work as the cheese.
Can I skip the blue cheese?
Yes. An aged Gouda gives you a similar sweet-salty contrast without the blue flavor.
