Why it works

Burrata is the centerpiece: cut it open at the table and the creamy center spills onto the board. Cherry tomatoes, olive oil and balsamic around it make an instant caprese, while Parmigiano and provolone add the salty, firm side.

Prosciutto, soppressata and mortadella cover silky, spicy and rich, and marinated artichokes and Castelvetrano olives cut through all three. Chianti Classico has the acidity Italian food is built around.

Questions

What goes on an Italian antipasto board?

Burrata or fresh mozzarella, Parmigiano-Reggiano, provolone, prosciutto, soppressata, mortadella, cherry tomatoes, marinated artichokes, olives, olive oil and balsamic, focaccia and grissini.

When should I take out the burrata?

About 20 minutes before serving. It should be cool, not fridge-cold, and it's best eaten within an hour of opening.

What wine goes with antipasto?

Chianti Classico, made from Sangiovese. It's bright enough for tomatoes and cured meats.
