Why it works
Indian cooking balances sweet, sour, salty and hot in the same meal, and this board sets that up in four bowls: fresh mint-cilantro chutney, sweet-sour tamarind, fiery mango pickle and cooling raita. Every protein on the board has at least one partner there.

Indian grocery stores stock all three, and many supermarkets now carry paneer and frozen kebabs. For the least work, order tikka and seekh kebab from a local Indian restaurant.
How do I keep the board from being too spicy?
Keep the heat in the mango pickle and label it. Put the raita and mango near the tikka so guests can cool down, since dairy soothes chili heat better than water.
What drink goes with an Indian charcuterie board?
A cold lager or an off-dry Riesling handles the spice. For no alcohol, serve mango lassi or masala chai.
