Why it works

The garnishes on a caviar board are there to stretch one small tin: cool crème fraîche, chopped egg whites and yolks, minced shallot and chives. Each one changes the bite a little, and none of them hide the roe.

Mini blini are traditional, but thin, plain potato chips are a favorite modern swap. Smoked salmon makes it filling, and brut Champagne or ice-cold vodka is the classic pour.

Timeline

  1. Day beforeHard-boil and chill the eggs; chill the Champagne or vodka.
  2. T–30 minChop the egg, onion and chives into separate small bowls.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

How much caviar do you need for two?

About 30 g (1 oz) is a generous tasting for two. Trout or salmon roe lets you serve more for less.

What do you serve with caviar?

Blini or plain potato chips, crème fraîche, chopped hard-boiled egg, minced shallot or red onion, chives and lemon, with Champagne or vodka.

How do you keep caviar cold?

Set the tin on crushed ice and open it right before serving. Use a bone, mother-of-pearl or plastic spoon; metal can give it a slight off taste.
