How to choose
- Serving straight from the jar? Buy marinated. Water-packed hearts taste flat until you dress them.
- Read the oil. Most US jars use sunflower or canola oil, not olive oil. Country of origin (often Peru or Spain) is in small type.
- Quartered beats whole for a board: one bite, no knife.
- Drain them well and pat dry so the oil doesn't run into the crackers. Serve in a small bowl with picks.
How much: about 2 oz per guest when they're one of several antipasti. A 12 oz jar covers about 6 people. More on marinated artichokes
Artichoke heart questions
Marinated or water-packed artichoke hearts for a charcuterie board?
Marinated, if you're serving them straight from the jar: the top two in Sporked's test were both marinated. Water-packed hearts are milder and work if you add your own olive oil, lemon and herbs.
Should you drain jarred artichoke hearts?
Yes. Drain marinated hearts well and pat them dry so oil doesn't run into the crackers and cheese. Rinse water-packed hearts to cut the canned taste.
How long do artichoke hearts last after opening?
Refrigerate them after opening, covered in their liquid, and use a clean fork. Mezzetta says its opened products keep anywhere from 5 days to 3 months depending on the product, so follow your jar's label, and throw it out if it smells off or shows mold.
How many artichoke hearts per person?
About 2 oz per guest when they're one of several antipasti. A 12 oz jar covers about 6 people, and a 24 oz jar about 12.
Are jarred artichoke hearts healthy?
They keep much of the fiber and vitamins of fresh artichokes, but they're higher in sodium, and the marinade adds fat. Rinsing water-packed hearts lowers the salt.
