Why it works

Smoked salmon is the anchor: rich, salty and deep pink in long folds across the middle. Flaked smoked trout has a lighter smoke and sits between the salmon and the cream cheese, so the flavors step down gently. Sweet, mild shrimp gives everyone a break from the smoke.

Capers, red onion, lemon and dill are what make smoked fish taste clean, and cream cheese and Boursin carry them. Keep the seafood cold until the last minute and serve on a chilled platter.

Timeline

  1. T–30 minTake the cream cheese out to soften; keep the seafood cold.
  2. T–20 minShape the cream cheese; slice the cucumber.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.
