Why it works
Past about 36 inches, a board stops being a board and becomes a landscape: half the guests will never reach the middle. So each cheese becomes a landmark placed toward the edges, and where you put them decides how people move around the table.
Six cheeses and six meats cover every taste, from mild brie to Gorgonzola dolce and delicate prosciutto to pepperoni. Bowls repeat at both ends, and fruit and crackers fill every gap so it looks abundant all evening.
Timeline
- T–60 minTake out the hard cheeses; set the bowls along the table.
- T–45 minTake out the soft cheeses; place all six cheeses.
- + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.
Questions
How much charcuterie for 25 people?
As the main food, about 3 oz each of cheese and meat per person: roughly 4½ to 5 lb of each for 25.
How big a board do I need for 30 people?
A 36 to 48 inch board, or a table covered with butcher paper. Make sure guests can reach it from at least two sides.
Can I build it ahead?
Cut the hard cheeses and make the bowls the day before. Build it within an hour of guests arriving and refill from the fridge. Leave it out no more than 2 hours, or 1 hour above 90°F.
